1. Post-Certification Obligations Overview
HACCP certification is not a one-time achievement. KHAS conducts annual surveillance audits and a full re-certification audit every three years. Failure to pass can result in certification suspension or revocation.
2. Annual Surveillance Audit
Each year, a KHAS auditor visits to verify that the HACCP plan is being implemented as documented. Auditors check CCP monitoring logs, corrective action records, calibration records, and staff training documentation.
3. Triennial Re-Certification
Every three years, the full HACCP certification process is repeated. The HACCP plan is re-reviewed, updated if needed, and subject to a comprehensive on-site audit.
4. Required Ongoing Records
- Daily CCP monitoring logs (temperature, time, pH, etc.)
- Corrective action reports for any CCP deviations
- Cleaning and sanitation records
- Pest control logs
- Employee training and illness records
- Supplier certification and ingredient records
5. Common Revocation Cases
- Failure to maintain CCP monitoring records
- Undocumented process changes that affect critical limits
- Repeated corrective action failures with no root cause analysis
- Significant facility non-conformities found during surprise inspection
6. Process Change Reporting
Any significant change to production processes, facility layout, or product formulation must be reported to KHAS and the HACCP plan updated before implementation. Undocumented changes are a major audit finding.
